Chocolate Truffles!!


Chocolate Truffles

makes about 40 truffles

Ingredients

230gr very good quality chocolate - I used Valrhona
250 ml(1 cup) cream
30 ml(2 Tbsp) butter
30 ml of your favorite booze - kahlua, brandy, Cape Velvet, orange liqueur, kirsch (optional - you can omit this)
200gr (2 cups) good quality cocoa powder

Method
1. Place the Valrhona chocolate buttons in a glass bowl or if you are using other chocolate, break it up into smaller pieces. The smaller the pieces, the quicker it melts.
2.Pour 200ml of the cream into a small saucepan and over low heat, bring it to the boil. Pour the hot cream over the chocolate in the glass bowl and leave for 5-10 minutes.
3. Add the liqueur if you are using any.
4. Combine the remaining 50 ml of cream and the butter together. The butter needs to be almost melted to ensure an even mix when it is added to the chocolate.
5. Stir the chocolate and cream mixture mixture until smooth
6. Gently whisk the butter mixture into the chocolate mixture.
7. When the mixture is smooth, let it cool, cover with cling film and place in the refrigerator to set overnight. The chocolate mixture must be so firm that you could form it into balls the next day.
8. When you are ready to make the truffles, remove the mixture from the refrigerator ,sprinkle enough cocoa powder on a plate and dust your hands with cocoa powder before rolling each truffle.
9. Scoop some of the the truffle mixture with a teaspoon and then shape it with your hands into bite-sized balls. Work fast otherwise the chocolate will melt in your hands. Roll into more cocoa powder.
